About the Author

Spencer's mother and grandmother specialised in classical baking – beautiful cakes and pastries that left an impression on him as a young boy. From working in great restaurants, with great chefs, Spencer developed a love for modernising traditional recipes, and he names Michael Lambie of Lamar's in South Melbourne where he worked as a chef consultant, and Pierre Kauffmann as his greatest influences. These days Spencer pursues his passion of gluten-free food through his website and conducts gluten-free cooking classes at several of Melbourne's leading technical and further educational institutions.
